Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Citrus Syrup: Place the listed components in a saucepan, bring to a simmer, agitating so the sugar melts. Then, take off the stove and let it to reach room temperature fully. Decant into an clean bottle, cap it and refrigerate it chilled, it can be stored for around one month.
To make Cocktail Base: Combine all the liquid ingredients in a big jug, let it rest for 60 minutes, then filter it , ideally through cheesecloth, making it fully clarified.
For serving: Pour 85ml from the cocktail base into your stirring glass containing ice, gently stirring gently for one minute to chill. Filter into an chilled martini glass or equivalent, decorate with the cranberries and finish using a quick spritz of mandarin oil over the drink.
